I changed the recipe a little bit. I left out the dairy to make it vegan, and I left out the dried fruit. I really don't like dried fruit in savory dishes. I also uses pecans instead of almonds because that's what I had at home.

Your couscous looks wonderful, the pecans sound delicious in this, I bet they added a great crunch! Vegan Tuesdays sounds like fun and this is a perfect dish for it.

ReplyDeleteI love couscous, Michele. Have you tried dried cranberries in it? For some reason, they seem to work well in savory dishes.
