I did want to make something, so I made a pseudo-Dacquoise. I made tiny little puff pastry rounds filled with coconut flavored whipped cream--I used a little coconut milk, and roasted pineapple. They were cute and super tasty.

These look fabulous!!! I know because I don't eat sweets that all I comment on are your desserts but you make them look so good and so tempting. :)
ReplyDeleteWow, those look really good. How did you make the coconut flavored whipped cream? Did you just mix in coconut? Or use an extract?

I love the pseudo dacquoise! It looks so good and light and refreshing!
ReplyDeleteMMM...whipped cream and puff pastry. Delicious!
ReplyDeleteHow cute! I sympathize with you...turning on the oven when it's that hot is almost impossible for me!
ReplyDeleteI love your substitutions. It looks great!
ReplyDeleteI love how you made the individual ones! What a cool idea :) The pineapple on top is such a nice touch.
ReplyDeleteThese look like they taste super light, but I will also check out the original recipe.
ReplyDeleteYour pseudo-dacquoise looks amazing! Like the perfect dessert for 100 degree weather!
ReplyDeleteYour version sounds so much simpler and it looks quite tempting!! I chickened out completely. Nice job!
ReplyDeleteThank you for all the comments!
ReplyDeleteI made the whipped cream with some coconut milk. I would have used extract or coconut rum, but I didn't have either at home.
I really like your pseudo Dacquoise. How nice the little tarts would be for one of the receptions at my church when I do the desserts.
ReplyDeleteHeather- they were quite easy to make as well.
