Barefoot Bloggers / Vegan Tuesdays Curried Couscous

Ellyn, from Recipe Tester and Collector, chose this week's recipe, Curried Coucous. Couscous itself takes about 5 minutes to make, so it's perfect for summer weather; the only cooking involved is boiling water. This recipe is for a cold couscous, really more of a salad-type dish. It's perfect for a BBQ as you can make it ahead of time. Couscous is actually a teeny-tiny form of pasta, and is very popular in Northern Africa and the Mediterranean. This recipe is unusual in that Ina uses curry powder and turmeric as seasonings, which gives this dish an Indian flavor. I love Indian food so I really enjoyed the curry powder.

I changed the recipe a little bit. I left out the dairy to make it vegan, and I left out the dried fruit. I really don't like dried fruit in savory dishes. I also uses pecans instead of almonds because that's what I had at home.

  1. Your couscous looks wonderful, the pecans sound delicious in this, I bet they added a great crunch! Vegan Tuesdays sounds like fun and this is a perfect dish for it.

  8. I love couscous, Michele. Have you tried dried cranberries in it? For some reason, they seem to work well in savory dishes.
    Those green tea shortbreads look yummy — leave it to Martha (and her cast of thousands)!
