I didn't make any major changes to the recipe, though I did use dried cranberries instead of raisins since that's what I had at home. Also, I added a bit of finely diced fresh apple to boost up the fruit factor. And, I added some lime juice for a bit of extra flavor.
The bread was really tasty and Dave especially enjoyed it because he loves mangos. Please see Kelly's blog for the full recipe: http://bakingwiththeboys.wordpress.com/2009/05/19/twd-my-fresh-mango-bread-well-my-pick-anyway/

And... I couldn't do a post on a mango recipe without sharing a photo of our cat Mango. This is Mango and her favorite toy mouse.
Great looking loaf and cute cat!ReplyDelete
Oh, I'm dying to make some breads and sweets with my new mixer. I'm going to try this as I love moist fruit breads. Thanks! And your cat is adorable. Reminds me of my old cat, Rocki.ReplyDelete
Love the picture of 'mango' and her mouse.ReplyDelete
Thank you for sharing the recipe, I look forward to making this when I see the next lot of mangoes. It would be a great change from the usual banana bread loaf for a breakfast treat.
Oh...your kitty is a cutie.ReplyDelete
I struggled to like this bread...it was ok, but I gave most of it to a friend.
The only thing that could top the photo of your beautiful loaf is the photo of Mango. What a cutie she is!ReplyDelete
Your mango bread looks fantastic.ReplyDelete
Your cranberry and apple additions sound great! And what a cute cat!ReplyDelete
Mango is cute. Your bread looks really tasty - cranberries sounds like a good substitution.ReplyDelete
Mango the bread and Mango the cat look gorgeous! I like the cranberry sub and the apple and lime juice additions!ReplyDelete
Mmmmm...your bread looks great!ReplyDelete
Mmm, I bet the addition of apple made this bread even more deliciously moist. And I love the sub of dried cranberries for raisins. Your bread turned out beautifully! Great job.ReplyDelete
Great looking loaf. I thought about cranberries and then forgot. I added extra diced fresh ginger for a boost. It was good.ReplyDelete
