Tuesdays with Dorie - Mango Bread

This week is a fresh mango bread, chosen by Kelly, of the cute blog, "Baking with Boys". It's a very moist quick bread full of mango pieces and raisins. It's quite simple to make, and the recipe makes a huge loaf of bread. This is something that would be good for breakfast, or dessert.

I didn't make any major changes to the recipe, though I did use dried cranberries instead of raisins since that's what I had at home. Also, I added a bit of finely diced fresh apple to boost up the fruit factor. And, I added some lime juice for a bit of extra flavor.

    Thank you for sharing the recipe, I look forward to making this when I see the next lot of mangoes. It would be a great change from the usual banana bread loaf for a breakfast treat.

  13. Great looking loaf. I thought about cranberries and then forgot. I added extra diced fresh ginger for a boost. It was good.
