To be a bit more fancy-pants, I decided to caramelize sugar on top of the tart-Dorie mentions this in the original recipe. This is the same technique used in Creme Brulee. I had never used this little culinary blowtorch before, and except for a relatively minor explosion with some spilled butane, the caramelizing wasn't too difficult-just time comsuming. Still, it's neat to try some thing new, though Dave was standing by with the fire extinguisher the whole time as I am known to be VERY clumsy.
