With the leftover meringue from the floating islands, I made this pavlova. It's basically a crispy meringue exterior with a marsmallow-y interior, topped with whipped cream and berries. To the leftover meringue, I added about 1/2 cup more sugar, 1 teaspoon of vinegar, and 1 tablespoon of cornstarch. I mixed it well, spread it on a parchment lined baking sheet, and baked at 200F for about 1 hour.
The ice cream is delicious. It's chocolate-y/hazelnut-y/orange-y goodness. If I didn't stop him, Dave would have eaten the whole container in one sitting. To the leftover custard from the floating islands I added: the strained milk that the islands were poached in, 2 cups of cream, a bit of cocoa powder, a little sugar, some orange oil, a little vanilla, and a small jar of chocolate-hazelnut spread. I mixed everything really well and then processed it in the ice cream maker. Truly amazing!
