If you can get fresh peas, this is an amazing soup, But, it's also quite good with frozen peas. It's an Ina Garten recipe
and as usual, Ina knows what she's doing. To make this vegan I left out the creme fraiche and used vegetable broth and vegan margarine. This is not at all like split pea soup, it's much fresher tasting. It tastes like spring. I love peas so this is the perfect soup for me. Serve it with croutons or some nice bread for dipping. It's supposed to be served hot, but I had some at room temperature and it was still good.
