I was intrigued by this recipe which includes cooked lentils in the dough. Also included are oats, almonds, pumpkin seeds, and chocolate chips. I especially love pumpkin seeds and that was my favorite part of the cookies. These came out well. They're more cakey than crispy and they have a bit of health food type taste, but I really like that they weren't too sweet and were chock full of so many good things. If you're worried about tasting lentils in the cookies, don't be. You'd never know there were lentils as they seem to cook to mush in the dough.
