Pasta, Pesto, and Peas (vegan version)



This is a Barefoot Contessa recipe and when I saw it I thought it looked interesting, but a little iffy because of the mayo. I made a vegan version using vegan pesto, something like this, vegan mayo, and no Parmesan. I also added extra peas because I love them, and less pesto than was called for because I like it in small quantities best.

Overall, it was really good--the mayo wasn't gross or out of place at all. I think next time I'll use even less pesto because it's such a strong flavor that it masks the taste of the peas. This actually was quite tasty and made a huge quantity even though I used only 1 box of pasta.

  1. Ha ha, glad that the mayo wasn't gross! I agree about not overdoing it on the pesto, though I'd have a hard time omitting the Parmesan!
