Vegan Pumpkin Coconut Soup

I was hesitant about making pumpkin soup because pumpkin always reminds me of dessert. But, I watched an episode of The Two Fat Ladies on Amazon and they made a pumpkin soup which looked delicious. This soup is wonderful. I'd like to try it with fresh pumpkin, but the canned pumpkin was actually very tasty. Instead of using the individual spices, I just used some Madras curry powder which I love the taste of.

  1. This sounds great, and I think the spices would help it not seem like a dessert. I think I've got a couple of cans of pumpkin - this might be a good use for it!
