Potato Hash (vegan)



Whenever I make potatoes--baked, boiled or roasted--I always make a double batch so that we can have hash the next morning. To make the hash, I saute onions and bell peppers until they're just starting to brown. When they're done I put them in a bowl and saute the potatoes until they're golden brown (or close to it if we're really hungry.) I add the onions and peppers back to the potatoes, and season with salt, pepper, and hot sauce. Yum! Dave likes to have a fried egg on top but I prefer mine plain. You can add any other veggies or seasonings, whatever you're in the mood for.
