Moroccan Carrot Salad



I like carrots but I usually don't love them. This salad was an exception because it was really very good and the seasoning was spot on.Of course I left off the cilantro. And the parsley because it reminds of of cilantro so I can't eat it. The only difficult thing about the salad was grating masses of carrots--I doubled the recipe--but it actually didn't take very long.

  1. This sounds really good! I've been known to cheat and buy shredded carrots rather than dealing with shredding them myself.

  2. Hi Michele! Happy new year! I love the sound of this salad - spicy and tangy all at once. Have you tried using a food processor to grate the carrots? With a lot of carrots, that might make it easier for you. Love your kitty, pics, too, and the new look of your blog!
