Cranberry Cornmeal Cake



I had 1/2 a bag of frozen cranberries in the freezer that I wanted to use up. I found this recipe for a Cranberry Cornmeal Cake that looked easy and would use up all of my cranberries. I didn't follow the recipe because instead of making a cranberry topping, I just mixed the topping into the rest of the batter. It worked out well and the cake came out moist and sweet and tart at the same time. I used blue cornmeal which was a lovely contrast with the red berries. And, I baked it in a square cake pan not a round one.

Overall, it was a simple and tasty cake and a good way to use up those leftover holiday cranberries.
