Broccoli, Cheddar, and Pine Nuts (vegan friendly)




This is a delicious way to serve broccoli and can be vegan if you use Daiya Cheddar Shreds instead of cheddar cheese. I am finding Daiya products at more and more local grocery stores. I did not cook the broccoli in the microwave because I don't know how to cook in a microwave. I am pretty good at kitchen gadgets and equipment, but the two things that I don't do are broil and microwave. I haven't a clue how to use either one. We do have a small microwave that Dave uses to make popcorn, and I suppose that my stove has a broiler though I've never sought it out. I boiled the broccoli in rapidly boiling water just until it was tender and drained it well. The recipe calls for 2 cups of cheese which just seems excessive to me, so I used about half that.I should have toasted the pine nuts but I didn't think about it until after we were already eating it.

Broccoli, Cheddar Cheese, and Pine Nuts
2 crowns of broccoli
2 tablespoons of butter or vegan margarine
lemon pepper to taste
salt to taste
two cups of shredded cheddar or vegan shreds
1 cup of pine nuts

Clean the broccoli and put in a large microwave bowl. Add a bit of water and microwave for 5 or 6 minutes or until tender. Drain any water. Add the butter or margarine, lemon pepper, salt, cheese, and pine nuts to the broccoli. Mix well.

  1. I always microwave my broccoli! But I think boiling it or steaming it gives the same result. I agree that 2 cups sounds like too much cheese, but this sounds delicious!
