Barley Swiss Muffins (savory)






These muffins are amazingly good. They have green olives, which I adore, Swiss cheese, and walnuts. The recipe calls for green olives and pimentos separately, but I just sliced up some pimento stuffed green olives and that worked well. These would be perfect to serve at a cocktail party if you baked them in a mini muffin tin. It seems a bit weird to have savory muffins, but these are pretty much just a quick bread shaped into muffins.

  1. I think these sound fantastic, and would be a nice alternative to a corn muffin or bread to go with soup or chili.
