Banana Oat Pancakes



These pancakes taste just like banana bread! They're delicious. A word of caution though, the batter is very thick so cook these on a low heat so as not to burn the outsides before the middle gets cooked. Dave had his with maple syrup and I thought they were delicious just plain. The recipe is from The King Arthur Whole Grain Baking book.

Banana Oat Pancakes
3small bananas, mashed
2 tablespoons unsalted butter, melted
1 tablespoon lemon juice
1 tablespoon sugar
2 eggs
1 cup oat flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon

Stir together the bananas, butter, lemon juice, and sugar in a medium bowl. Beat in the eggs. Whisk together the flour, baking soda, salt, and spices in a small bowl. Form a well in the dry ingredients and pour in the wet ingredients. Stir the batter just until the dry ingredients are thoroughly moistened. Add some milk if the batter is too thick. Let the batter sit for 10 minutes.

Cook pancakes in a lightly oiled pan until the sides are brown and the middle is set.
