TWD: Baking with Julia -- Cranberry Walnut Pumpkin Loaf



This is some seriously delicious bread. From the title you'd suspect that it's a quick bread, but it's not, it's yeasted. The recipe came together fairly easily, though the dough is heavy and a bit sticky to work with. My only issue was that the frozen cranberries I bought were apparently exposed to radiation or something because they were the size of grapes. I had the hardest time getting them to stay in the dough. But other than giant cranberries, things went well.

PS--I forgot to mention that I used mashed sweet potatoes instead of the pumpkin. I like the taste of sweet potatoes better and I never know what to do with the leftover pumpkin.

  3. Leftover pumpkin makes a killer pumpkin cookie or a wonderful pumpkin scone with a spiced glaze or a pumpkin muffin with a cream cheese filling. Check my blog under pumpkin for some yummy treats.
    Yes, the bread was delicious, I'll try it next time with sweet potatoes as per your advise!
