TWD: Baking with Julia -- Cranberry Walnut Pumpkin Loaf
This is some seriously delicious bread. From the title you'd suspect that it's a quick bread, but it's not, it's yeasted. The recipe came together fairly easily, though the dough is heavy and a bit sticky to work with. My only issue was that the frozen cranberries I bought were apparently exposed to radiation or something because they were the size of grapes. I had the hardest time getting them to stay in the dough. But other than giant cranberries, things went well.
Please visit our host, Rebecca, to see her gorgeous loaves of bread.
PS--I forgot to mention that I used mashed sweet potatoes instead of the pumpkin. I like the taste of sweet potatoes better and I never know what to do with the leftover pumpkin.

I'm glad you made this and liked it! I thought it was delicious and am very happy to have another mini-loaf in the freezer.ReplyDelete
Looks delicious! Interesting that you used sweet potato- I'll have to try that!ReplyDelete
Leftover pumpkin makes a killer pumpkin cookie or a wonderful pumpkin scone with a spiced glaze or a pumpkin muffin with a cream cheese filling. Check my blog under pumpkin for some yummy treats.ReplyDelete
Yes, the bread was delicious, I'll try it next time with sweet potatoes as per your advise!
Sweet potatoes sound like an excellent substitution. Love the bright colors in your loaf.ReplyDelete
