Sweet Potato Muffins



I am on a sweet potato kick lately. I love to eat them roasted on the grill, boiled and mashed, and baked in the oven. Plus, I've been making sweet potato baked goods. Anything that calls for pumpkin, I substitute mashed sweet potatoes.

This is a simple muffin recipe with the flavors of fall--cinnamon, nutmeg, nuts and raisins. The muffins are moist and very flavorful, but not sugary-sweet. They're great for breakfast, but we actually had them for dessert, warm out of the oven.

  1. You're on a muffin kick! Great idea to sub sweet potatoes for pumpkin. I like them baked like a baked potato with butter, salt and pepper (no marshmallows!).
