Vegan Chocolate Rice Pudding Using Leftover Take-Out Rice


I always end up making this for Dave when we have leftover take-out rice. To make this simple rice pudding: Put the rice in a heavy bottomed saucepan, breaking it apart so that there are no large clumps. Pour in enough chocolate almond milk (or any other non-dairy milk) to just cover the rice. Add sugar or other sweetener and cinnamon to taste. Cook on very low eat, stirring frequently, until the rice absorbs the milk and becomes very creamy. Serve warm or at room temperature. I top my rice pudding with chocolate sprinkles or chocolate sauce.
