Buckwheat Pancakes and Crazy-good Waffles
I'm not a big breakfast person, Dave is, but I love a good breakfast for dinner. If you're a waffle lover, you're going to thank me for this recipe. I don't even like waffles, but I devoured these. And if you want a different spin on plain 'ol pancakes, this recipe uses buckwheat which gives them a gorgeous color and a nutty taste.

The pancake recipe is here. Don't be intimidated by the buckwheat. The pancakes turn out light and fluffy and really flavorful. I can find buckwheat at the regular grocery store, but if you can't, any health food store should have it. If you do end up buying some, or if you have some already, stayed tuned because I'm going to share a recipe for amazing and not too sweet buckwheat cookies in the near future.
