Christmas Cookies--Rum Raisin Shortbread and Chocolate Pretzel Cookies



Jill and I decided to channel Martha Stewart and make two of her Christmas cookie recipes. We made Rum Raisin Shortbread Cookies (the recipe is here), and Chocolate Pretzels (the recipe is here). My favorite of the two is the shortbread, because I really like the background rum-coconut taste--very tropical! The chocolate pretzels were kinda' good, but a bit on the dry side and not extremely flavorful. They're very cute though, and I think drizzling each pretzel with a bit of melted white chocolate would be a tasty improvement.

In both recipes the baking time seems excessive, so I ended up baking the cookies for about half the time called for. Watch your cookies closely and when the shortbread is just browning around the edges, it's done. It's hard to judge when the pretzels are done, but in my oven they took about 12 minutes. Again, watch the first batch closely--you don't want the bottoms to get browned.
