Another collaboration with Jill! Raspberry-Champagne Sorbet... Could anything be more perfect for a hot summer night by the pool.
I'm a huge raspberry fan, and hey, champagne isn't something I'll say no to. This sorbet is amazing and it's not so sweet that it's sticky and cloying. It's refreshing and light and a bit tart. The recipe is from The Perfect Scoop by David Lebovitz and you can find the recipe on Jill's blog. To make the white chocolate sauce, I melted a white chocolate bar, (you can find vegan versions online), with a little soy creamer. Sweet-tart, warm-cold, the chocolate sauce and sorbet were perfect together.
