Cranberry Granita Sundaes (vegan)


I LOVE cranberries... all things cranberry really, especially cranberry juice. I wanted to make a vegan "ice cream" sundae for Thanksgiving dessert, and I wanted the sundaes to look festive and have a holiday feel.

After lots of thinking and pondering, I came up with a sundae made from coconut "ice cream", cranberry granita, candied cranberry topping, and soy whipped cream.

The coconut ice cream and the soy whipped cream were store-bought. I made the granita and the cranberry topping, and both are so simple to whip up and can be made in advance.

I didn't use a recipe for the granita--I mixed cranberry juice, with just a little sugar and a splash of vodka. Food Network has a similar recipe and it's very highly rated.

The sundaes weren't a super traditional Thanksgiving dessert, but they were so yummy!
