Baked Apples Filled with Cinnamon Candies



This is such a fun recipe and so full of cinnamon goodness. Usually, baked apples are filled with cinnamon, sugar, walnuts, raisins--things like that. These apples are filled with "red hots", those spicy cinnamon candies that turn your hands read when you eat them. They're very easy to make and only require a few ingredients. You can make them vegan by using a non-dairy margarine. Some of the red hot versions have beeswax as an ingredient, so if you're making this vegan, check the package. Or, I imagine that you could use other hard candies, just crush them before filling the apples. This is a great source for vegan candy.

Bubbee and Me Baked Candy Apples
6 medium baking apples
2 tablespoons unsalted butter, divided into 6 pieces
about 2/3 cup red hots
3/4 cup fresh orange juice

Preheat the oven to 350F. Using a vegetable peeler, remove a wide strip of peel from the top of each apple. Using an apple corer, scoop out and discard all traces of the core, being careful not to make the cavity too large or to pierce the bottom of the apples.

Arrange the apples in a glass baking dish large enough to easily hold them. Using clean fingers, smoosh pieces of butter down into the cavity of each apple. Then divide the red hots among the cavities, reserving 2 to 3 tablespoons. Pour the orange juice into the bottom of the baking dish and sprinkle the reserved candy over the juice.

Bake, uncovered, basting occasionally with the juice until the apples are tender when pierced with a knife, about 40 minutes. Remove from the oven and drizzle some of the baking juices over each apple. Serve a little warm.

  4. Looks delicious, but FYI, Red Hots contain beeswax and are not vegan-friendly (and of course neither is butter). Just so you know!
