Pasta with Fresh Tomatoes


This is the perfect summer pasta sauce, made with gorgeous ripe tomatoes, red bell peppers and zucchini. It only takes minutes to make and doesn't heat up the kitchen too much.

I saute a couple of sliced red bell peppers and some garlic in olive oil, add a diced zucchini, and two or three big handfuls of cherry tomatoes. Heat until the tomatoes just start to burst. Season with salt to taste, and mix with cooked pasta. You can also stir in some fresh basil at the last minute.
