Almost too good for words -- Cherry Gelato


The farmer's market had fresh cherries. Yum! They're Dave's very favorite fruit and I love them too.

I made gelato using this Gourmet recipe. It was amazingly good and had lots of cherry and not too much of the ice cream part. It was more cherries with a bit of gelato, then gelato with a bit of cherry added.

Unlike most ice cream recipes that have a custard (egg) base, this gelato is thickened with corn starch. It ends up being a little less smooth than traditional gelato, but it's so easy to make and so full of cherry flavor that I didn't mind the slightly grainy texture. I needed to almost double the amount of corn starch to get the mixture to thicken.

This gelato is easy to make vegan since there are no eggs. Just use almond milk (or soy milk).

I am going to use this recipe with other fruits since it seems easily adaptable.
