Almost Instant Pickles

These pickles are a thing of beauty; you can make them in mere minutes, you can eat them in 24 hours, and they taste awesome. The downside is that they are not long lasting--you have to eat them within a week. They are a summer treat when cucumbers are in season, and not something to look forward to in the depths of winter. Still, they are so simple to make and so tasty, you'll be craving them for your weekend BBQs. I made enough to fill three jars, and we ate them all over the next two days.

I thought I was being clever by mixing the brine in a pitcher so that it would be easy to pour. Unfortunately, the bottom of the the pitcher just fell away when I picked it up, and my kitchen and I were drenched with salty-vinegary-hot water. The whole house smells like a pickle factory.

  3. Yikes! I hate when things like that happen. It takes a while to recover from the mess! I dropped a chocolate smoothie a while ago, and it fell and slatter EVERYWHERE! I thought I cleaned it all up, but for weeks, I would find litle hidden splatters of chocolate. haha.
    I am so obsessed with fresh pickles. I cant wait to make these! You have great recipes on here!

  5. I am in pickle mode this season, Michele. Love that recipe.
    And I hate when things like that happen - I once had a gallon jar full of coffee beans that lost its bottom and scattered all over the kitchen. I stepped on coffee beans for months! Maybe not as bad as smelling like a pickle factory, but I thought I would commiserate. :)

  6. How weird about your pitcher. Messes like that are so hard to clean up! The pickles sound great, though. I have some preserved pickles, but I like refrigerator pickles and haven't made them in a while.
