It may not look like much in the photo, but this oatmeal bread was crazy-good--mildly sweet and incredibly moist. I replaced a portion of the regular flour with amaranth flour. I also added some hemp and chia seeds. Dave and I both thought that the bread was so yummy we almost went to battle over the last piece. If possible, serve it warm or even slightly toasted. A nice thick slice served with a scoop of vanilla ice cream would make a lovely dessert.
