Fresh Apricot Clafouti

A clafouti is sort of a baked custard-y/cake-y dessert, usually made with fresh fruit. They're simple to whip up and make a fast treat when you have some lovely ripe fruit on hand. I made an apricot clafouti since it's apricot season here. I sort of followed Emeril's recipe, but I added extra fruit since that's by far my favorite part.

Dave likes clafouti (though he has no idea that's the actual name of what he's eating) warm from the oven with ice cream. I prefer to eat it cold and I usually pick out most of the fruit and give Dave the custard part.

Both raspberries and cherries make gorgeous clafouti--the red fruit against the pale custard is so pretty, and the tartness is a good compliment to the sweetness.

If you have fresh fruit and you're tired of the ubiquitous summer crumbles and cobblers, try making a clafouti. They're easy, and very tasty.
