Pineapple Upside-Down French Toast

I love fresh pineapple, and when it's on sale for $1.75 each, I stock up. In looking for pineapple recipes online, I found this French toast--it's baked in the oven with the caramelized pineapple on the bottom of the pan, and then flipped to serve. I used some leftover anise bread to make this, and the flavor of the anise, cinnamon and pineapple was delicious.

You can find the recipe here.
