Lemon Poppy Seed Shortbread Cookies

I love lemon. I love shortbread cookies. And I love poppy seeds. How perfect are these cookies for me! When I saw this recipe I immediately wanted to make these cookies. It's a simple recipe with just a few ingredients. The only slightly difficult part is rolling out the shortbread dough, but if you chill it first and roll it between layers of waxed paper it's a cinch. If at any time the dough gets too soft and hard to work with, just re-chill until it's firm again.

The cookies were delicious--lemony and buttery with a slightly nutty taste from the poppy seeds. Adding some crunchy sanding sugar on top is a nice touch, These would be perfect to give to your sweetie on Valentine's Day
