Creamy Broccoli Soup

Dave loves soup! A big pot of soup on the stove makes him very happy. This is one of his very favorite recipes--Creamy Broccoli Soup, and it's just so easy to make that I love it as well.

Here's the basic recipe and of course I used veggie stock. You can make this cheesy by adding a couple handfuls of grated sharp cheddar right at the end when the soup is just off the heat. I like it best topped with a small amount of grated Parmesan cheese or croutons. Be sure to serve bread or crackers with this as it's the perfect soup for dunking.

You can use this recipe as a base for making other creamed soups--cauliflower, potato, carrot, etc. It's also simple to veganize--just use non-dairy margarine and a milk substitute.
