This is just a quick post to share a very simple lemon bar recipe
. I love that these bars have coconut in the crust. The recipe calls for powdered sugar as a topping, but since I love the taste of coconut I added that instead--about half way through the baking time. It really worked out well since the coconut topping became toasted and a bit nutty. Yum!
