The January 2010 DC challenge was hosted by Cuppy of Cuppylicious and she chose a delicious Thai-inspired recipe for Pork Satay from the book 1000 Recipes by Martha Day.
I decided to do my satay with tofu and use a peanut dipping sauce. I marinated the tofu in sweet chili sauce, tamari, a little hot chili sauce, and a few drops of dark sesame oil. I let it sit in the marinade overnight, anf then I baked it in the oven until it was nicely browned. (I don't broil--ever.)
The satay was delicious mainly because this marinade works really well and gives tofu so much flavor. This is actually my favorite way to cook tofu though usually I cut it into thin slices and make sandwiches.
