Daring Cooks December -- Vegetable en Croute


The 2009 Daring Cooks challenge was hosted by Simone of Junglefrog Cooking. Simone chose Salmon en Croute (or alternative recipes for Beef Wellington or Vegetable en Croute) from Good Food Online.

I made my Veggies en Croute with a filling of mashed potatoes, mushroom gravy, sauteed mushrooms and onions, and roasted bell peppers. It was totally delicious--sort of like a really amazing Hot Pocket. Since I typically make my mashed potatoes with veggie broth instead of milk, I was able to keep this dish vegan.
