

I made my Veggies en Croute with a filling of mashed potatoes, mushroom gravy, sauteed mushrooms and onions, and roasted bell peppers. It was totally delicious--sort of like a really amazing Hot Pocket. Since I typically make my mashed potatoes with veggie broth instead of milk, I was able to keep this dish vegan.

That looks so yummy! You could easily serve that to a meat eater and they would never complain that it is vegan!
