Vegan Thanksgiving Feast

I became a vegetarian in my teens solely because of my love of animals and support of animal causes. Dave became a veggie shortly after we were married. Lately, we've made a concerted effort to eat vegan meals more frequently. We've now decided that all of our big holiday/celebration meals will be 100% vegan.

So, here's our very first vegan Thanksgiving feast! Everything was delicious and perfect and we both felt wonderful for not eating any animal products. The only dish I used a recipe for was the sunflower-bean patties, the rest of the dishes are things I make all the time. To replace the milk in the mashed potatoes I used veggie broth. And instead of any butter I used vegan spread.

Here's the menu:
Sunflower seed-bean patties
Mashed potatoes
Mashed sweet potatoes
Roasted mini-potatoes and onions
Roasted Brussels sprouts
Roasted rutabagas (turnips)
Stuffing with celery, onions and peas
Mushroom gravy
Green bean casserole with fresh mushrooms (no canned soup) and toasted panko-pecan topping
Glazed carrots

For snacking we had:
Pickled beets
Hummus with bread sticks, cucumbers and red bell peppers

Roasted chestnuts
Fresh pineapple and pomegranate
Cran-apple tart on vegan puff pastry

  2. Um, yeah - where's my plate? :) It all looks so good - I wouldn't have missed the turkey. Besides, Thanksgiving is really all about the side dishes!

  3. Wow, that is an impressive vegan feast! Tahini is really yummy in mashed potatoes, both for flavor and creaminess - I definitely recommend it.

  4. That looks like a fabulous feast! I'm bookmarking the sunflower-bean burger recipe. I love veggie burgers, but I've never made my own before.

    If you ever go to the Weber Grill restaurant (in Illinois!), try their veggie burger. It's really good!
