Corn, Feta, and Chickpea Salad


I saw a recipe for Corn and Feta Salad in Real Simple Magazine recently and I thought that it sounded so good. I sort of tweaked the recipe--adding chickpeas and making the vinaigrette with sweet potato vinegar, canola oil, and a little hazelnut oil. I also added some hemp seed. It was really delicious--our new favorite salad.

  2. That looks like such a good combination of ingredients. I know it's probably not that hard to cut corn off the cob, but I don't think I've ever tried doing it.
