Vegan Tuesday -- Strawberry Rice Krispie Bars

**Vegan Marshmallows from Sweet & Sara

I am going to continue with weekly vegan posts--a wonderful tradition started by my blogging buddy Wendy of Pink Stripes I will do my best to post on Wednesdays.

I know. These treats don't look like much. The photos are not very flattering. But...these are VEGAN rice krispie treats. Vegan. How neat is that? And, they are strawberry flavored using real strawberries. The only reason I was able to make these successfully was because I used one of my favorite vegan products--Sweet & Sara Vegan Marshmallows. ( They are genius and look and taste just like non veg-friendly marshmallows. Actually, they taste better. They also can be used in cooking just like regular gelatin marshmallows. I love them.

Vegan Crispy Treats

1 box of Sweet & Sara marshmallows
3 tablespoons of vegan margarine
5-6 cups of crispy rice cereal

Melt the margarine in a pot over low heat. Add the marshmallows and stir until completely melted (about 10 minutes). Remove from heat. Add the crispy rice cereal and mix until well coated. Spray an 8" square pan with oil and press mixture down evenly with fingers and chill in refrigerator for about 15 minutes or until firm. Cut into squares and enjoy!

  2. yum! I have made rice krispie treats before using brown rice syrup and peanut butter. But I would love to try some the traditional way! How do you add the strawberries into the mix? Thanks!

  5. Thanks! The strawberry marshmallows are sold by Sweet & Sara. I think you could also add some finely diced dried berries to the hot mixture.
