Vegan Tuesday (posted on Saturday)... Vegan Pancakes




Dave loves pancakes, but I don't make them all that often because of the eggs and milk involved. I've been looking for a good vegan pancake recipe for awhile, and now I've found one! This recipe was on the neat Veg Web site which is a great place to find vegan recipes.

These pancakes are a snap to make, and are so delicious! We both loved them, and there is no guilt involved in eating them. You can find egg replacer at most health food stores, or at lots of places online. I use the Bob's Red Mill brand because it works well, and I can just store the large package in the fridge.

These pancakes are going to be a breakfast staple for us--they are that good!


Best Tasting Pancakes Ever! Vegan or Otherwise

Ingredients (use vegan versions):
1 cup white all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons sugar
1 teaspoon vanilla
1 egg replacer
1 cup soymilk ( I used almond milk and I needed about 2-3 cups to make a wet enough batter)
2 tablespoons vegetable oil

Directions:
Mix wet ingredients in a medium sized bowl. Mix dry ingredients in a larger bowl. Pour wet ingredients into dry - mix well until smooth consistency. Drop onto medium heat (preheated) pan. Flip over when each pancake begins to bubble on top. Serve with vegan buttery spread (if desired) and maple syrup.

    These vegan pancakes do look good. I have never used vegan egg replacer in baking before. I am looking forward to trying it someday and pancakes would be a good way to see how they work. Thanks Michele.

  2. I like the idea of the egg replacer. I'm not vegetarian, but I usually don't go through eggs very quickly and I hate throwing them out. It would be nice to just keep that in the fridge and use that in recipes. Bob's Red Mill has so many nice products.
