Summer Fruit Mousse -- Vegan Tuesdays



I wasn't in the mood for any type of major dinner last night--Dave is away and I just wanted to grab something quick. So, I had a peanut butter and jelly sandwich, and I made a simple summery dessert.

I found this lovely, light peach mousse recipe on recipezaar.com. Of course, I substituted a vegan version of jello for the regular thing. You can buy vegan gelatins at Vegan Essentials (http://www.veganessentials.com/); they have an unflavored version as well as a couple of fruit flavors. I also used a vegan whipped topping instead of whipped cream, and agave instead of honey.

This turned out be such a fluffy and fruity dessert--a wonderful treat for a warm night.


Summer Fruit Mousse
1 package peach or orange Jell-O
1 cup boiling water
3 medium ripe peaches, sliced
2 tablespoons honey
1/4 teaspoon almond extract
1 cup whipped topping or whipped cream
fresh mint, additional peach slices or raspberries, optional

Place Jello and water in a large mixing bowl and stir to dissolve.

Place peaches, honey and almond extract in a food processor or blender and process until smooth.

Add to jello and stir to combine.

Cover and refrigerate 1 1/2 hours or until the mixture is the consistency of syrup.

Beat the mixture on high speed 5 minutes or until doubled in bulk.

Gently fold in whipped topping.

Spoon into stemmed wine glasses and refrigerate at least one hour.

Garnish with your choice of toppings if desired.
