Squash and Lima Bean Casserole



My neighbor across the street brought over some squash that she grew in her back-yard. I think it must be a good year for squash, because she's giving it away to all the neighbors. I usually do something Italian-ish with squash--pasta sauce or panini, but I wanted to try something new. I found this recipe on allrecipes.com and it sounded simple, and I had all the stuff on hand.

Squash Casserole
7 yellow squash, sliced
1/4 cup milk
1/2 cup butter, sliced
2 eggs, beaten
1 bunch green onions, tops thinly sliced
salt and pepper to taste
3 tablespoons white sugar
1 cup shredded Cheddar cheese
2 cups crushed buttery round crackers

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Bring a large pot of water to a boil. Add squash and cook until tender but still firm, about 15 minutes; drain.
To the squash add milk, butter, eggs, green onion tops, salt, pepper and sugar; mix well. Transfer to a 9x13 inch casserole dish. Sprinkle with cheese and crushed crackers.
Bake in preheated oven for 30 minutes.

I did make some changes. I steamed the squash until it was tender-crisp. I added a small bag of frozen lima beans, doubled the milk, skipped the sugar, and added an extra egg. Instead of crackers, I used toasted bread for the topping. Oh, and I left out the green onions since I didn't have any.

The casserole turned out to be quite tasty, and not heavy at all. I served it with some simple elbow macaroni. All and all, it was rather a comfort-food type of meal. Nice.

I wish I had a neighbor who brought me over fresh squash from the garden! Knowing me, I'd probably bake with it and make my favorite chocolate chip zucchini bread. Your recipe looks much healthier, though!

  4. Hi, Sounds like you just about creatd your own recipe...and it looks very good. From the picture it looks like zucchini...or is it yellow squash?...either way, sounds yummy!!
