Leftover Pasta Transformed into Frittata

A few days ago, one of my favorite bloggers, mangocheeks, from Allotment to Kitchen made a delicious looking Broccoli Pasta Frittata. http://allotment2kitchen.blogspot.com/2009/08/spicy-broccoli-pasta-frittata.html
So, when faced with a bowl of leftover pasta in the fridge, I thought I'd do the same--make a pasta frittata.

A frittata is sort of a baked omelet. It's started on top of the stove, but then the final bit of cooking is typically done in the oven, or under the broiler. You can use just about any filling with a frittata, just as you would an omelet. One variation is to use cooked pasta, with or without sauce, and usually some cheese. It's a fantastic way to turn leftover spaghetti into a whole new meal. Don't you just love those thrifty Italians!



I don't really use any specific recipe when I make a frittata. I put whatever cooked filling I'm going to use into a big oven-proof skillet, heat it, and then add 6 or more eggs that have been beaten with some cream or milk. I add seasonings, sometimes cheese, and then I cook the eggs just until they are set on the bottom. Then, I put the skillet in a 350F oven until the top of the frittata is cooked and golden brown. To serve, just slide it onto a platter and cut into wedges.
