The Cake Slice -- Pistachio Petit Four Cake





This month we baked Pistachio Petit Four Cake--a yellow cake flavored with pistachios, layered with apricot jam, chocolate ganache, and marzipan; and frosted with more chocolate ganache.

I did make some changes: I don't like marzipan, so instead I made a simple vanilla custard flavored with almond extract to use as the filling. I also baked the cake layers in larger pans since I don't have 8-inch cake pans--the cake was thinner than it should have been.

How was it? It was a lot of work for an okay tasting cake. The cake part was good, but a bit on the dry side. I'm not a fan of chocolate ganache frosting since to me it's almost overwhelming. But, Dave loved the chocolate part. The custard filling ended up being a nice touch and gave some moisture to the cake. If you like petit fours, and cakes with lots of chocolate, then this is the cake for you.

I've come to the conclusion, after many baking disasters, that I just can not bake a decent, beautifully decorated cake. I am too impatient. I can do the cake part okay, but I have issues with the frosting and decorating. Maybe that's why I tend to bake cupcakes!

  3. Your cake is gorgeous! And Smudge is adorable. I'm glad to see that I'm not the only one with a cat that somehow always naps where he is not supposed to. Sometimes my camera will pick up a stray cat hair that my naked eye didn't see. ;>
