Buckeyes



I spotted a super simple recipe in the most recent Gourmet Magazine for something called Buckeyes. I had no idea what a Buckeye was, but with such an easy recipe, I just had to make them.

Buckeyes:
1 cup peanut butter
1 stick unsalted butter, softened
1 1/2 cups powdered sugar
1/2 teaspoon vanilla
1/3 cup all-purpose flour
12 ounces semi-sweet chocolate chips
2 ounces unsweetened chocolate, chopped
toothpicks

Line 2 baking sheets with parchment. Beat together peanut butter, butter, sugar, and vanilla until smooth. Stir in flour. Roll mixture into 3/4-inch balls and arrange on baking sheets. Freeze 1 hour.

Melt chocolate in a double-boiler. Using toothpicks, dip each peanut butter ball into the chocolate, leaving a bit of the peanut butter showing at the top. Let excess chocolate drip off. Freeze until chocolate is set, about 1 hour. Remove wooden picks and serve. Store in freezer.


Now isn't that easy! Especially for a Gourmet recipe. I wasn't supposed to cover the peanut butter balls all the way to the top, but I got carried away. These Buckeyes are meaant to mimic the fruit of the buckeye tree--which, as far as I know, I've never seen. I was also supposed to take the toothpicks out, but I didn't because I love eating food off of picks--it seems so posh.


And, saving the best for last... How did these little morsels of peanut butter and chocolate-y goodness taste? Amazing! Just like frozen peanut butter cups. Dave was scarfing them down so fast he nearly speared himself in the eye with a toothpick. Buckeyes certainly are a big hit at our house!

  3. I love buckeyes! I think they are a midwest thing (isn't Ohio the buckeye state??). My mom's family always makes them.

  4. Oh man, I haven't had a buckeye ever since I moved away from Ohio (where you could find them everywhere...) Those look wonderful, and I would never turn down one with a little extra chocolate :)
