I'm a little bit late posting this... Carol, from the wonderful blog mix, mix... stir, stir chose Dorie's Perfect Party Cake as this week's recipe. It's a big, beautiful white cake with buttercream frosting, raspberry jam, and coconut. I took a shortcut by making cupcakes instead of one big cake, just to save on oven time. I also bypassed the buttercream and made an easy no-cook cream cheese frosting. I didn't feel confident tackling a buttercream in this weather. To make the frosting I mixed together 8 ounes of cream cheese, 1/2 stick of butter, powdered sugar, and a pint of fresh raspberries. Both the cupcakes and the frosting were fantastic! This is definitely a cake I'll bake again.
