
I somehow missed the very first Daring Cooks challenge back in May. The challenge was ricotta gnocchi using the recipe from Zuni Cafe--the San Francisco culinary landmark. I've made potato gnocchi before, but never ricotta.

The recipe for these gnocchi is pretty straightforward, with few ingredients. I didn't anticipate that I would have problems, but I was wrong! The dough comes together easily, and the shaping isn't too difficult. But, my gnocchi kept falling apart when I cooked them. They would turn into big mushy blobs. Only a small percentage of the gnocchi turned out well. This is a recipe I will definitely have to tackle again! Does anyone have any suggestions?
