Tuesdays with Dorie - Coconut-Roasted Pineapple Dacquoise

I think I mentioned in my last post that the TWDers were making Pineapple Coconut Dacquoise this week. It's a gorgeous dessert--layers of cripsy almond and coconut flavored meringue, with a white chocolate ganache filling. Roasted pineapple and toasted coconut finish off the Dacquoise. It sounds really delicious, and I did intend to tackle it today, but since it is in the 100s and the meringue needs to bake for three hours, I just couldn't motivate myself to make it. I'm still recovering from the weekend's baking disaster. I will definitely make this again during cooler weather.

I did want to make something, so I made a pseudo-Dacquoise. I made tiny little puff pastry rounds filled with coconut flavored whipped cream--I used a little coconut milk, and roasted pineapple. They were cute and super tasty.

  2. Wow, those look really good. How did you make the coconut flavored whipped cream? Did you just mix in coconut? Or use an extract?

    I made the whipped cream with some coconut milk. I would have used extract or coconut rum, but I didn't have either at home.
